Provided: Tea, coffee, biscuits.
What you need to bring: Notebook and pen. Please bring warm clothing as some of the course will be outside (under cover).
Learn how to smoke food with just very basic equipment.
This course will show you how to select and prepare food to be hot and cold smoked. There will be guidance on the choice of wood and the design of the smoking equipment.
There will be a demonstration of cold smoking, simply using a cardboard box, and hot smoking using 2 roasting tins and a camping stove. All the smoked food will be available for tasting at the end of the day.
Anyone with specific food allergies please advise at time of booking as there will be fish, nuts, dairy and eggs used in the demonstrations.
Beckland Charcuterie will have products available to purchase should you wish to buy.
