An Introduction to the Smoking of Foods

Provided: Tea, coffee, biscuits. A light lunch of jacket potatoes, sausages, smoked cheese and salad.
What you need to bring: Notebook and pen. Please bring warm clothing as some of the course will be outside (under cover).
Learn how to smoke food with just very basic equipment.
This course will show you how to select and prepare food to be hot and cold smoked. There will be guidance on the choice of wood and the design of the smoking equipment. There will also be a demonstration of cold smoking, simply using a cardboard box, with food available for tasting at the end of the day.
Anyone with specific food allergies please advise at time of booking as there will be fish, nuts, dairy and eggs used in the demonstrations.
