Time: 10am - 4pm approx
Provided: Tea, coffee, biscuits.
What you need to bring: Notebook and pen. A packed lunch - kitchen facilities available. Please bring warm clothing as some of the course will be outside (under cover).

An introduction to curing and smoking food, covering cold smoked cheese/fish/nuts/bacon, hot smoked fish, chicken, curing bacon, gammons, fish

Tasters of all the food available during the course

Learn how to smoke food with just very basic equipment.

There will be guidance on how to smoke food with just very basic equipment, the choice of wood and the design of the smoking equipment.

There will be a demonstration of cold smoking, simply using a cardboard box, and hot smoking using 2 roasting tins and a camping stove.

Anyone with specific food allergies please advise at time of booking as there will be fish, nuts, dairy and eggs used in the demonstrations.

Beckland Charcuterie will have products available to purchase should you wish to buy.
