Venison Butchery Training

Time: 9am - 2pm approx
Provided: Butchery knives are available to use if required. Light refreshments/drinks provided.
What you need to bring: Please bring an apron and your own knives if preferred. Please bring a packed lunch.

The training will be run by Paul, the proprietor of Beckland Game, a licenced food business operator dealing in Game Meat.

The programme is flexible and will commence with skinning a red or fallow deer carcass. The carcass will then be broken down into primary cuts of haunches, shoulders, saddle, flanks and neck. The haunches will be divided into topsides, silversides, steaks and diced steak. Shoulders will be boned out, diced or minced. The trim meat will be course minced and made into burgers and sausages or left as minced steak.


At the end of the day, all the prepared venison will be bagged and labelled and divided equally between the participants for them to take home and enjoy.
