Introduction to Cider and Apple Juice Production

This course runs once a year - date dependent on the apple harvest - usually around October time. Email to be put on the waiting list if interested and no date is currently set.

Time: 9am - 4.30pm Approx
Provided: Printed processing cider/juice guide, Printed course slides, example risk assessment, tea/coffee, cordial, biscuits.
What you need to bring: Packed Lunch, Pen, Notebook, Waterproofs, clean wellies for inclement weather.

This course is for anyone who wishes to press and bottle apple juice and cider for their own consumption or for sale. It includes approx. 1.5 hours of classroom work but is mostly practical in nature. There will be plenty of opportunity for questions and discussion.

 

The Course will cover the following:

Selection and outline of care of trees and apples. The process of Picking, Storage, Washing, Pressing, Fermentation (cider), Blending, Bottling and Pasteurization. The sourcing and selection of equipment is covered along with estimated costs as is the use of additives and cleaning chemicals. Risk assessments, licensing and food safety registration is also covered in outline. There will be an opportunity to take home pressed juice from that day and bottles will be provided at cost price. Apples for the day may be pre-picked. An orchard will be viewed as part of the section of care of trees.
