106 Butchery, Bacon & Bangers

Provided: all equipment including safety glove, light lunch.
What you need to bring: Bring a clean apron or white coat, note book and camera if you wish.

The course will cover the following:

The course is ‘hands on’ so you get to be the butcher and get involved. This course includes bacon curing and sausage making tuition, giving an introduction into how an animal is processed into the finished products we are all familiar with.

Session 1
Basic hygiene, safety procedures and then butchery. Transform a half pig into primal cuts, then into pork joints. Learn how to cut, bone and tie, using a proper butchers knot.

Session 2.
From there you will learn how to make the loins, belly and legs into bacon and gammon. Covers de-rinding, cutting & vacuum packing.

Session 3.
After that you will be making sausages. This section shows you how to make the most of all of the ‘trim’ and produce succulent sausages, including how to ‘link’ your bangers for that professional finish.

Accommodation is available at the tutor's B & B at reduced rates if required.

Please note: If for any reason you need to cancel your place on a course, 2 weeks notice prior to the course date will be required to receive a full refund. If you have reserved a place, please make sure we receive payment 3 weeks before the course (6 weeks for non-members). Thank you.

Most of our courses are aimed at adults and are quite intensive, so they are not aimed at children. If you would like to bring a child on a course please discuss it with the training manager before booking. It is assumed that bookings you make are for adults. Only people who have paid the course fee are allowed at the training venue. Do not bring pets or other animals to the training venue unless you are required to do so as part of the course. Most venues are working smallholdings and dogs or other animals (even if left in your car) are disruptive and compromise biosecurity.
